What's Cooking in Israel? Salat Rousee: Russian Salad

No cooking, serves 6

You will need:
8 oz. diced cooked potatoes
8 oz. diced cooked beets (optional)
8 oz. cooked peas
8 oz. cooked diced carrot
2 dill pickles, diced
3 hard-boiled eggs diced
mayonnaise mixed with sour cream and a dab of mustard, to taste
salt and pepper to taste

Hint: Using a package of frozen, diced mixed vegetables, cooked until tender, will reduce preparation time.

Carefully mix all the ingredients together so they will not get mushy. Serve as a salad or as a first course. Garnish with lettuce, pickle, and/or sliced egg.

At parties, Russian old-timers in Israel serve this surrounded with halved egg whites filled with amber and black caviar (the local kosher kind).
